My honey and I are on a healthy eating kick; so I have been reading my "The Complete Idiot's Guide to Low-Carb Meals." So far the results are 50/50. I made Wild Rice and Beef Casserole and that was pretty good Steven said.
Ok, heres a quick side story that goes along with casseroles. The last time we went home to Lubbock, Steven's good friend Vinnie (he was in the wedding), came up to me and said, "Jess, I am not trying to offend you, but can I ask you a question?" So of course I said yes; and he said "What is up with white people and their casseroles?! At work we had a Christmas party, and all the white women brought casseroles!!" So now casseroles are big joke in our family. Ok back to the main story.
Ok, so I found another meal called Tamale Pie that I am going to make tonight. But, Steven cringes everytime mention I am going to cook "Mexican Food". Maybe its for the following reasons:
1) My mom makes "Enchilada Casserole" (see there we go again with Casseroles!), and its pretty much frozen taquitos with rotel and velveeta poured over the top and baked. Now before Steven, I thought that was the real deal Mexican food. So when my mom mentioned this dish to Steven she described it as "Great for when you are in a pinch" and to that Steven says "So is grilled cheese!!!" And then he told us to never mention or offer to make it to his family! HAHA!
2) I decided I was going to make Steven a nice Mexican right after we got married, so I made another variation of a Mexican casserole and Rice a Roni Spanish rice! Now to my fellow crackers, this sounds perfectly fine....but my honey got the biggest kick out it.
3) And last, I wanted to learn how to make some of the Leijas dishes, so I was getting instructions from them and writing them down; and they thought it was so funny because I was asking for measurement amounts and writing all down...they just cook on a whim. So the last time Steven's family was here, I was watching his dad cook Papas, and I would observe what he would do for about 3 min and then quietly slip into our bedroom, close the door, and scribble it all down on a sticky note!
Ahh, like my honey says "Cracker by Birth, Mexican by Marriage"...so we will see how my meal turns out tonight :)

I am curious to see what he thought. I guess it would be like someone telling me they're going to make German food using Eckrich sausage and sauerkraut! There's no denying that his family are great cooks! I've been thinking you could write a book full of anectdotes and stories, kind of a "Gringas" guide to marrying into Hispanic culture and call it "Beans & Crackers"! Ha Ha!

I love it! LOL! I was laughing so hard when I read your post! And for the record the dinner was "alright" according to Steven; but I didnt mention that I made refried beans...Old El Paso from the can with some grated cheese mircrowaved...lol!
