Yum Yum Chocolate Brownies

Yum Yum Brownie Muffins

(1 Muffin, or 3 minis - 181 calories, 3.5g fat, 37g carbs, 2g, fiber, 2g protein - 4 WW points)

This super-simple 2-ingredient recipe is a Weight Watchers Fave!

1 box devil’s food cake mix
1 can solid pack pumpkin (15 oz.)

Directions:
Mix the two ingredients together. Don't add anything else that may be mentioned on the box, such as eggs, oil, or water. The mixture will be very thick and you will be tempted to add in other things to make the batter smoother. DO NOT DO THIS AS IT WILL RUIN EVERYTHING! Place batter into muffin tins (or mini muffin tins) lined with paper, or sprayed with non-stick spray. Bake at 400 degrees for 20 minutes. Makes 12 regular or 36 mini muffins.

These are also really good with the Spice cake mix and a can of pumpkin - you know pumpkin muffins. Just curious, where did you get this recipe? My friend Laura introduced these to me about a year and a half ago and she got it from her Mom who got it from someone else so I've never been able to locate the "source". When it's chocolate I guess it doesn't really matter.

And yes Mom, you can add some dark chocolate chips. It doesn't really change the point value too much since dark chocolate is low in points. It makes for some nice sweet spots in the muffins.

These also freeze really well...I usually make the minis and freeze half of them for later. They're not bad frozen either you know for the times when I REALLY need chocolate!

Hey Jenn!

They are from that Hungry Girl cookbook...which by the way Rocks! Every night I have cooked a recipe out of it and not one has been bad. We have done Turkey Reubans, Mini Pizzas, Pad Thai, Lettuce Wraps, Citrus Stir Fry Shrimp and Chicken Pot Pie...all which are so good! So far I have lost 6 pounds...Hungry Girl is the bomb! :)
