This is a recipe that I have made before; its super easy, turned out great....and its healthy!
Ingredients:
No-stick spray
2 C. low-fat Cheezits
1/2 to 3/4 t. dried basil
1/8 t. black pepper
1 pd. boneless chicken breasts, visible fat removed
2 T. milk (lower the fat the better...I use 1%)
Instructions:
Preheat oven to 400. Spray shallow baking dish with no-stick spray. Place Cheezits, basil & pepper in large ziploc bag and crush cracker with rolling pin. Set aside.
Rinse chicken, pat dry. Cut into 1X3" strips. Dip chicken in milk, then add to bag with Cheezit mixture and shake until coated. Place in single layer in dish. Bake uncovered 5-7 min.
